Day 171: A welcome return to fine form

This evening, in the midst of an advanced bout of head lice paranoia, with accompanying scratching, L and I made Fruited Chicken Curry in a Hurry. As soon as the onion, garlic, coriander, ginger and green apple started sizzling in the pan and the kitchen filled with a fantastic aroma, we thought we might be on to a winner. Prior to triggering the delicious smell, we had lightly browned the chicken and set aside, and started cooking the rice according to the instructions. To the vegetables we added some flour, and a minute later some chicken stock. Once it came back to a bubble, golden raisins, dates and a mild curry paste were added. The chicken went back in the pan, simmered some more and then it was time to serve dinner. The toppings, of which any or all could be used, were scallions, mango chutney, sliced almonds, toasted shredded coconut and cilantro.

This curry is extremely tasty and good. It is very quick and easy to prepare, and tastes like it has been cooking slowly all day. I have always thought that store bought curry paste was a bit of a cop-out, but actually the paste we used packed a good flavour punch. I liked that there was no cream in this dish, and yet the sauce was rich and thick and satisfying. Personally, I am not a great fan of the raisins and dates, stemming from the raisins in school dinner curry, but L thought they were great. The green apple was very successful as it added a tart, bitter note in contrast with the sweetness of the rest of the fruit. All in all; a winner. There is a suggestion in the recipe book for a vegetarian version made with firm tofu rather than chicken, which would probably be really good. Although I have to say, the chicken was pretty fine, which is high praise indeed.

Tomorrow we will be tackling Ham and Swiss Crepes with Chopped Salad which sounds like good summer fare. It’s crazy to think that in less than two weeks we’ll have hit the half way point of this project, and of course 2008. I’m also starting to get a little freaked out that I am swiftly approaching the third trimester of this pregnancy. I am suddenly feeling huge yet still have plenty of time to reach whale-like proportions. On the other hand, October will be here in no time at all and in the meantime we have mountains of work to do plus moving house. And meanwhile perhaps we should invest in some special shampoo…
