This evening, we made the Grilled Flank Steak Sandwich with Blue Cheese Vinaigrette-Dressed Arugula and Pears which was almost as good as the chicken version yesterday. I had thought that the lemon juice-thyme marinade might be better suited to chicken than steak, but I obviously had no idea what I was talking about; the flank steak was really tasty and tender. This did feel a little like lunch, rather than dinner, as it is so light, but that wasn’t a great problem. Just like yesterday, this was easy and fast and well-worth the effort. The $4 box of arugula perhaps wasn’t such a good buy, the spinach we have in the fridge already was a great substitute; a better choice in our opinion.
Tomorrow, we’re making Pasta with Roasted Eggplant Sauce and Ricotta Salata. Hopefully by then my cold will have cleared up a little. It’s hard to care too much about food when your head feels like it’s stuffed with cotton wool.
