This evening we revisited the green curry of yesterday, with tofu, rather than chicken. Mostly Green Curry Veggies and Tofu over Coconut Jasmine Rice was pretty good, although the gigantic lime we purchased resulted in a slightly overpowering citrus quality. It did work well to offset the extra creaminess from the tin of completely solid, liquid-free, coconut milk, however.
We still have friends over so this entry will be super short. It’s perhaps a little rude to be opting out of good conversation in order to blog. Maybe next time we’ll try live-blogging the social event. More wine will be necessary, I would guess. Tomorrow, we’ll be cooking Cider Vinegar Chicken with Smashed Potatoes and a Watercress and Cucumber Salad, which sounds like a most excellent meal.
