Today was both trying and tiring because Baby A is sick. She had tubes put in her ears on Friday which seemed to help her hearing and general demeanor immensely. Unfortunately however, the next day she developed an entirely unrelated, lovely barking-seal case of croup. This has mutated into a heavy cold with upset stomach. She is feeling extremely sorry for herself, and wanted to be held for almost the entire day, poor little kitten.
While I tried to settle Baby A down into bed, L made Cider Vinegar Chicken with Smashed Potatoes and a Watercress and Cucumber Salad. This was an enjoyable solid meal; balanced, tasty, hearty and basically all things good. The chicken was essentially poached in cider vinegar and chicken stock, with caramelised onions, garlic and fresh thyme. The smashed potatoes were made with butter and half-and-half, which is always going to be good. The watercress and cucumber salad added a crisp refreshing element, with a bit of a bite.
Overall, we thought that this meal was highly successful, and worth the time and effort. In our humble opinion, this meal would be tremendous with pork chops, rather than chicken, but that is purely personal preference. Tomorrow, we substitute white wine for the apple cider vinegar and add goat’s cheese and crushed pepper flakes to the potatoes. Lo and behold, an entirely different meal will be created; Chicken in Spicy and Sweet Onion Sauce with Goat Cheese Smashed Potatoes and a Watercress and Cucumber Salad.
