Day 74: “It’s good”

This evening we made Turkey Croquettes with Spinach Mashers and Pan Gravy, which made a very good meal. The croquettes were made with celery, onion, thyme, parsley, poultry seasoning and egg white, and rolled in breadcrumbs before frying. The mashed potatoes had fresh baby spinach stirred through them, and were mixed with butter, chicken stock and half-and-half. We made a pan gravy by making a roux (thanks to Rachael Ray, now I know what a roux is and can make one no trouble) with butter and flour, then whisking in chicken stock. The meal was served with cranberry sauce which was a great addition, and one we’d never have thought to use ourselves. The recipe called for a can of prepared sauce, but we used homemade- this was the perfect opportunity to empty the freezer of some of the cranberry sauce mountain that I made in a fit of over-enthusiasm at Christmas.

Overall, this meal was very tasty and satisfying. Our guests pronounced it “good” and we all enjoyed it. There is a reasonable amount of chopping involved, but it is not disproportionate to the end result by any means. Tomorrow, this is revisited as Cod Croquettes and Red Bell Pepper Gravy with Spinach Mashers, which I’m guessing will be substantially different. Now, if you’ll excuse me, I am going to get an early night. I guess now is as good a time as any to confess that I am growing a baby in my tummy and it is making me super sick, all the time. This constant focus on food is taking a bit of a toll, when all I can really face is things made entirely from white flour. Maybe I should also mention that when I was pregnant with Baby A, I stopped eating chicken for the entire duraton of the pregnancy, and beyond…

    I have a hard time eating meat and poultry while I’m pregnant too. It’s mainly b/c I can’t stand the smell of it cooking. You really have your work cut out for you trying to eat all that chicken and all those sauces!
